I've always been a fan of snacking throughout the day, when it isn't quite the right time to pull out my lunch. Whether it be a granola bar, an apple, or some crackers, it's always important to keep your stomach fueled, so you don't go crazy at lunch-time. However, sometimes I do like a bit more of a snack and something I can share with a friend while watching a movie or just hanging out. Guacamole.
Here's a recipe of mine. It's fast, simple, and healthy:
1/4 of a Red Onion
4-5 Cherry Tomatoes
Salt & Pepper
First, get a medium sized bowl that you could eat straight out of. Take two avocados, remove the pits and outer peel and begin using a fork to smash them into a nice green, smooth mixture. Next, chop the portion of the red onion vertically and horizontally so that you have little bits, and put that right into the avocado mixture. Chop the cherry tomatoes in half. You could halve them again if they seem still too big (some cherry tomatoes are quite large). Sprinkle some salt, pepper, and cayenne pepper. Drizzle a little bit of olive oil. Mix the mixture up so that the olive oil is evenly dispersed and the mixture is smooth (it should not be watery). Squeeze a little bit of fresh lemon juice and mix it up and you're done!
As for chips, I recommend the whole grain scoops tortilla chips or the Terra potato chips (these are the ones that jet-blue normally gives out). For some added flavor, eat with a salsa to your preference of spice and even some sriracha sauce for even more spice. I like the Kirkland Salsa that is sold at Costco. The ingredients are organic and it comes with two large bottles.
